Patsi’s Wings — Crispy Oven-Baked with Buffalo Sauce

I haven’t been posting as much lately because I’ve been BUSY relocating!! (Hope you’ve missed me!!)

But last night, I cooked up Ken’s absolute favorite — Chicken Wings with Buffalo Sauce — and let me tell you, they were finger-lickin’, biteable DELISH! 🍗🔥

Also… can we just talk about the size of the chicken wings here in Arizona?! HUGE!!
Anyway, I don’t really have a “recipe,” but I’ll tell you exactly what I did — and if you make them with my special coating, you’ll be SO glad you did.

Ingredients 🍗

The “Stuff”…

  • 1½–2 cups Pancake Mix Flour (yes, pancake mix! I used Aunt Jemima, but any kind works)
  • Spices — about ½ tsp each (but you do you):
    • 5 Spice Powder
    • Garlic Salt
    • Onion Powder
    • Smoked Paprika
    • Nutmeg (I LOVE nutmeg in everything… well, maybe not Caesar Salad 😬)
    • Pepper
  • 2 eggs, beaten
  • 2 Tbsp milk
  • 1–2 lbs chicken wings
  • Olive Oil or Coconut Oil (I used EVOO)

Instructions 👩‍🍳

What to do with the “Stuff”…

  1. Preheat oven to 400°F.
  2. Split wings into flappers & drummies (or don’t — depends on your mood). Discard the tips if you want.
  3. Mix pancake flour and all seasonings in a large bowl.
  4. Beat eggs and milk together in a medium bowl.
  5. Pour ½–¾ cup oil onto a large cookie sheet and evenly coat it.
  6. Dip each wing into the egg mixture, then into the flour mixture. Roll around until coated, shaking off excess.
  7. Place wings flapper-side down onto the oiled baking sheet.
    Don’t overcrowd them — you’re not steaming them!
  8. Bake 30 minutes, flip, then bake another 20–30 minutes until crispy and golden.

Buffalo Sauce 🔥

Equal parts butter and Frank’s Hot Sauce, plus 1 tsp vinegar (any kind).
Melt and whisk together until smooth.

Serve:

  • Pour over wings for classic buffalo style, or
  • Keep on the side for dipping (if you’re fancy and don’t want hot sauce fingers 😉).
